I have a secret. Many Thanksgivings ago, I lied to my kids. I tried to tell them the truth, I really did. But it was just the 5 of us for Thanksgiving dinner and I had made this surprisingly easy rotisserie chicken recipe. They thought it was a traditional Thanksgiving turkey and I could not convince them otherwise. It looked like a turkey, it tasted like a juicy, flavorful turkey…ok, I conceded, it’s a turkey. If they are devouring my food, who am I to argue?

And just like that a new holiday tradition was born in our house. Even if we have company come for a holiday dinner, they’re getting anything more complicated than my easy rotisserie chicken. If they want a huge turkey and a holiday meal that’s slaved over in a kitchen all day, they can go to someone else’s house. When my kids think back to the holidays, I want them to remember the delicious meal and the fun we had together. I don’t want to be in the kitchen cooking and cleaning all day and miss out on all the fun! 

The name of the game for me to survive the holidays with Rheumatoid Arthritis, is to keep it deliciously simple. And the best part of this recipe is it takes a mere minutes to prepare, the oven works the rest of the magic and there is very little to clean up. I make side dishes ahead of time and reheat them while the chicken is cooking. I could even cook 2 of these chickens in the space it takes for one humungous turkey roaster and in half the time.

Of course, I do make this easy rotisserie chicken recipe even when it’s not the holidays. When whole chickens are on sale for less than $1 a pound, it’s $5 for a main dish to feed my hungry boys. You can’t beat that when you spend as much as we do on groceries. As they become teenagers, it’s easy to spend more on groceries in a month than on our mortgage! 

IF we have any leftovers, it’s easy to incorporate shredded, cooked chicken into another meal during the week. Below the recipe, I’ve given you my favorite ways to use the leftovers.

Easy Rotisserie Chicken Cooked in a Bundt Pan Recipe

I came upon The Perfect Roast Chicken in a Bundt Pan from The Gardening Cook on Pinterest and decided to modify the recipe a bit to make it taste like rotisserie chicken. I had accidentally bought 2 of the McCormick’s Perfect Pinch Rotisserie Chicken Seasonings* in one of my overzealous couponing trips so figured now was a good time to use it to try and recreate my own chicken that only tastes like it’s been on a rotisserie for hours. 

Since I started using this recipe, my bundt pan* might be getting more use as a chicken roaster than as a cake maker!

Helpful Tips:

  • Add any vegetables you like to the bottom of the pan to make this a one dish meal. These would be great veggies to try:
    • White potatoes (cut them smaller if you want them to finish cooking in time with the chicken).
    • Butternut squash
    • Baby carrots or small slices of carrots
    • Brussel sprouts
  • Stuffing the cavity with lemon and onion makes the chicken extra moist and tasty. You could also put celery, onion and carrots.
  • I topped the chicken with rotisserie seasoning. Other suggestions to top the chicken: 
  • The dark meat will fall off the bone but if you need it, I had an electric carving knife to help cut the chicken breast.
  • Use a KitchenAid Mixer to shred the leftover cooked chicken quickly and easily. 
  • Use the chicken bones to make a gut healing bone broth. I found this recipe in the Autoimmune Solution by Dr. Amy Myers book, one I recommend if you are trying to understand your chronic illness.

Easy Rotisserie Chicken Meal in a Bundt Pan

Yield: 8
Prep Time: 10 minutes
Cook Time: 1 hour 40 minutes
Total Time: 1 hour 50 minutes

A simple, perfectly moist easy rotisseries chicken that only tastes like it’s been slow cooking on a rotisserie for hours.

Ingredients

  • 1-2 sweet potatoes, peeled and quartered
  • 1 sweet onion, cut into wedges
  • 1 small lemon, cut into wedges (optional)
  • 4-6 pound whole chicken
  • Olive Oil
  • McCormick’s Perfect Pinch Rotisserie Chicken Seasoning

Instructions

  1. Preheat oven to 450 degrees F.
  2. Place bundt pan on top of baking sheet.
  3. Place chopped sweet potatoes and onion in the bottom of the bundt pan.
  4. Remove giblets from chicken cavity and if desired, rinse gently with water and pat dry.
  5. Stuff cavity with 1/2 sweet onion and lemon.
  6. Place chicken so that the chicken is sitting upright on the bundt pan center with wings tucked under.
  7. Brush lightly with olive oil.
  8. Rub seasoning all over chicken.
  9. Cook at 450 degrees F for 15 minutes.
  10. Lower the heat to 350 degrees F and continue cooking for 80 minutes (20 minutes per pound until meat thermometer inserted into the chicken breast reads 155 degrees F).
  11. Turn heat back up to 450 degrees F for 5 minutes or broil 6 inches from the top burner until skin is desired color. Watch it closely so it does not burn.
  12. Let chicken rest on platter tented with foil for 5-10 minutes.
  13. Test veggies for desired doneness and return to oven if they need further cooking.
  14. Carve and enjoy!

Honestly, I love the leftover chicken from this easy rotisserie chicken recipe as much as when I first cook it. Next time, I’m going to make 2 of these chickens at the same time so I have more leftover meat to use throughout the week for lunches and dinners.  Here are some delicious ways to use the leftover rotisserie chicken:

BBQ Chicken Pizza (prepared pizza crust topped with bbq sauce, mozzarella & gorgonzola cheese, shredded chicken, red onion, cilantro and jalapeno)

BBQ Chicken and Cheese or Ceasar Chicken Wraps 

Chicken Nachos (topping suggestions: salsa, corn, black beans, sour cream, jalapeno, fresh tomatoes, cilantro and cheese)

Chicken Philly Sandwiches (sauteed onions, peppers, mushrooms and/or jalapenos, chicken, melted provolone or pepper jack cheese on a toasted hoagie bun)

  3. Sorry for the silly question but I’m in the UK and a bundt pan is something where I think I know what it is but I want to check I’m not about to do something really silly. It’s the ring type tin yes? So the chicken sits up above the veg kind of balanced on the ring? Thanks

    1. Yes exactly, I put the cavity of the chicken over the middle ring and it helps keep it standing upright while it cooks. The veggies are scattered around the bottom of the chicken. There is a link to the bundt pan in the post if you need to see one.

    1. Yea, I’ve only made turkey once, it was delicious but not worth the all day effort. Whole chickens are easier to come by and leftovers are super yummy.

Definitely going to try this because it sounds delicious and I love the ideas for leftover chicken. Now that there are only three of us at home, we always have leftover chicken (which is great!).

    1. Yes, once you realize how inexpensive and easy these are to cook you won’t go back to store bought rotisseries.I like that I can control the seasoning too so it isn’t so salty. I just made some chicken salad for lunch, it was yummy.
