Focusing on my small victories has helped me gain a healthier and more positive attitude as I juggle my 3 boys and the physical impairment of Rheumatoid Arthritis (a chronic and incurable illness). shadow of the wind

I am reading soooo slowly, I just haven’t had as much time to read but enjoying Shadow of the Wind and determined to finish it. I’m about 52% through the book and I can’t read it quickly enough. It’s mysterious, mesmerizing and just beautifully written.


I downloaded 20,000 Leagues Under the Sea by Jules Verne from the library, one of my Classics Club Book List selections. It was a very dry start, but now that they are on the voyage and searching for the infamous sea monster, I am enjoying it. Hope I can survive the voyage!


Last Week’s Menu:

  • Pioneer Woman’s Penne Alla Vodka
  • Greek Salad with Chicken using Closet Cooking’sGreek Salad Dressing Recipe/a>
  • Cooking Classy’s Slow Cooker Chicken Masala, Potata Talasani (Indian pan-fried Potato Straws) and Naan. I used a shortcut this time and it worked great. I used the frozen leftover masala sauce from the last time I made it, added about 1.5 pounds of frozen chicken thighs to the slow cooker, cooked for 4 hours on high and it was done and tasted just as good as if I had just made it.
  • Homemade Stuffed Crust Pizza. I bought the raw balls of dough on sale from the grocery store. Kids and I had fun attempting to roll out/hand toss the pizza dough, I knew that would be the hardest part for me. But it came out pretty good! The first stuffed crust pizza looked like a circle, the second one with pepperoni and green peppers, not so much. 🙂

Next Week’s Menu Plan:


      • After a fabulous Mother’s Day, I was motivated to get the pictures downloaded off my phone and into my computer so I can print up some family pictures to hang on the walls. 2,000 pictures downloaded!
      • I reogranized our master closet some, arranged Superhubby’s clothes by color and shredded a box of receipts we had in there from 2005-2010!
      • The playground slides were too hot but Daredevil and I headed to a nearby indoor playground
      • Edible Arrangements attempted to deliver a package to my neighbor and since she wasn’t home, they asked to leave it with me. I kept it for a couple days but she wasn’t home so I called Edible Arrangements to pick up her package. For my inconvenience, they delivered us a box of chocolate covered strawberries and apples which was a delicious treat for movie night on Friday.
