Menu Plan – Feb. 9. 2015

Last week reminded me that sometimes my RA gets in the way. It took me out of commission unexpectedly on Thursday but I cooked most of my menu plan. I just have to remember not to push myself too far, rest, recover and be flexible.
The definite kids favorite was the Spinach Ricotta Stuffed Shells. Good thing I had modified the recipe to use the entire box of jumbo shells because the boys have been devouring it! I was so happy that Superhubby loved my first attempt at Chicken Biryani too, just the smell of the slow cooking cardamom and curry reminds me of mom’s house. It made so much, I had to freeze half of it.
This Week’s Menu Plan:
This week I used one of the 5 meal planning tips that Mom of 6 shared that she asks her family what they’d like to eat for the coming week during Sunday dinner. This worked well for me as I asked each boy what they’d like and we all agreed on a delicious menu plan. So here’s what my boys requested this week:
Sunday:
A.1. Swiss Burgers from Cook This, Not That Cookbook*, french fries and salad or fruit
Monday:
Make Carrabba’s at home: Chicken Marsala (Carrabba’s Marsala Sauce recipe), Alfredo Noodles, salad and bread with Carrabba’s Herb Olive Oil dipping sauce. We love Carrabba’s and so excited to find their recipes on their blog!
Tuesday:
Buttermilk Waffles from Cooking Classy, bacon and fruit
Wednesday:
Bang Bang Shrimp from Damn Delicious, Cajun Shrimp using homemade cajun seasoning for kids
Thursday:
Leftovers or Baked Ravioli
Friday:
Homemade pizza (I use the crust recipe off the Fleischman’s Pizza Yeast packet)
Saturday:
Potato Ham Chowder from Damn Delicious and Baked Club Sandwiches from Detours in Life
Valentine’s Day means the boys will want their favorite Grilled Marinated Steak Tips and Cheesy Bacon Potato Rounds from This Simple Home.
Sunday:
Crockpot Italian Sausage Spaghetti

I have been loving Plan to Eat* to get my menu plan, recipes and shopping lists printed up fast! Highly recommend and you can try it out free for 30 days to see if you like it. It’s one of the Organized Home Goals this month to work on recipes, so I will be using Plan to Eat a LOT this month. I can’t wait to get all my recipes into it, but I have a feeling it will take me all month if not longer to do it, I’m a recipe hoarder.

Great menu plan! We’ve been trying to do this weekly planning, but the hardest part is picking something out because indecisive and all that.
