I am joining Menu Plan Monday hosted by Org Junkie and What’s for Dinner? Menu Planning Linkup hosted by Jill Conyers and Mommy Run Fast this week to share what we’re eating. The only topic I like to chat about as much as books is food!

Last week, I did pretty well making what I planned but I ended up switching around what days I cooked what depending on how I felt. The surprise of the week was using leftover bananas for this Banana Crumb Coffee Cake from Tide and Thyme. It was pure torture waiting for this to finish cooking and cooling. It was so delicious and a great quick breakfast, even the kid that doesn’t like cooked bananas loved this moist crumb cake.

This Week’s Menu Plan:

This week I am trying to incorporate more seafood and vegetarian dishes into our menu plan. My waistline and I are getting tired of chicken and beef. Since tilapia is one sale this week, a good time to try the tilapia tacos.

Sunday:

We went to the library booksale and I didn’t feel much like cooking after all the excitement and running around all day. So I cooked nothing!

Monday:

Cilantro-Lime Tilapia Tacos from Skinnytaste

Tuesday:

Shrimp Scampi from Damn Delicious

Wednesday:

Slow Cooker Chicken Taco Chili from Skinnytaste

Thursday:

Spinach Cheese Egg Muffins from Simply Stacie, fruit and bacon or sausage

Friday:

Homemade pizza

Saturday:

Leftovers and eating out

Sunday:

  1. We’re in a the last week of our grocery budget, so we’re trying to use up what we have before I shop again. We’re having orange chicken, burgers, Chicken Fried Rice (something we’re trying for the first time from Trader Joe’s) and breakfast for dinner. Nothing exciting . . . but starting to plan for next week. 🙂

    1. Yum, sounds tasty to me! So what’s on the Christmas menu? I really need to do better with our grocery budget, think I need to start using cash next year for it so its not as easy to go over budget. Have a happy holiday!

  2. That shrimp scampi recipe sounds so easy and yummy! I’ve never made it at home before. I don’t cook much. Last night was Chicken Fettuccine Alfredo with broccoli. Tonight is my husband’s holiday dinner for work so no cooking for me! Tomorrow night I’m planning chicken curry with rice. No idea after that. I should start doing weekly meal plans!

    1. The fish tacos were REALLY good (better than a restaurant good)! All the boys gobbled it down. Very fresh, easy and tasty! Skinnytaste always has fantastic recipes even the kids like.

    1. They were really good and tasty! Very easy recipe. Only problem was not enough leftovers for hubby to take for lunch (and well, reheating fish in the office microwave isn’t a great idea). Highly recommend this recipe. I just omitted tomatoes while cooking and added them to hubby’s and mine. Kids are not fans of fresh tomatoes.
