I am joining Menu Plan Monday hosted by Org Junkie and What’s for Dinner? Menu Planning Linkup hosted by Jill Conyers and Mommy Run Fast this week to share what we’re eating. The only topic I like to chat about as much as books is food!

Last week, I made about half of what I planned. There were lots of little things that came up and took longer than expected.

This Week’s Menu Plan:

This week I am trying to catch up on some of the dishes I didn’t get to last week. We have a stomach virus in the house so who knows what I will actually accomplish from this week’s menu plan!

Sunday:

We were out of town, we had a great time at The Polar Express in Bryson City, NC. Unfortunately, stomach virus hit on the way home.

Monday:

Spinach Cheese Egg Muffins from Simply Stacie, fruit and bacon or sausage

Slow Cooker Rice Congee with Chicken for the sick one. My mom used to make this rice soup when I was sick and rice is soothing on a sick belly so I’ll be making some of this.

Tuesday:

Italian Sausage Lasagna by Barilla (modified to use the no-cook noodles).

Wednesday:

Christmas Eve already?!?!
Slow cooker Maple Brown Sugar Ham by Life in the Lofthouse
Sweet Potato Casserole by Baked in AZ
Jack Daniels’ Bacon Mac and Cheese by the Slow Roasted Italian
Salad

Thursday:

Leftovers

Friday:

Homemade pizza

Saturday:

Eating out

  1. Awww I hope y’all are feeling better finally! I will have to try those spinach cheese muffins I wonder how they would turn out if I used frozen spinach??? I’d have to make sure it is drained really well! haha

    1. Oldest is better but hubby is still battling some virus. Yea, drain it well and I’d think it’d work fine. These muffins came out really good, everyone loved them.
