I am joining Menu Plan Monday hosted by Org Junkie and What’s for Dinner? Menu Planning Linkup hosted by Jill Conyers and Mommy Run Fast this week to share what we’re eating. The only topic I like to chat about as much as books is food! If you have a menu plan, feel free to link it up with our Small Victories Sunday Linkup. I’m always looking for new recipes to try.

Last week’s menu plan had a surprise healthy vegetarian hit,  Mujuaddara (Lebanese lentils and rice) from Lydia’s Flexitarian Kitchen. With carmelized onions and lentils I figured the kids wouldn’t even try it. But I encouraged them to try a couple bites before they decided if they didn’t like it and guess what? They loved it! The littlest actually ate a whole bowl of it rather than the leftovers I had let him eat. Small victories!

This Week’s Menu Plan:

This week I asked Superhubby to help me plan the menu. We headed to Pinterest and found some restaurant recipe favorites we should try to make at home, healthier and cheaper.

Sunday:

Baked Sweet and Sour Chicken from Life in the Lofthouse, Trader Joe’s Chicken Gyoza Dumplings, Stir Fried Broccoli and The Perfect Brown Rice from A Small Snippet

Monday:

Champagne Crock Pot Chicken from Mommifried with Rosemary and Garlic Red Potatoes from The Happy Homemaker. I hope the crock pot chicken will work with the sparkling wine we forgot to drink for New Year’s Eve!

Tuesday:

Copycat Panera Tuna Salad Sandwiches

Chipotle-style Slow Cooker Barbacoa Tacos

Slow Cooker Chipotle-Style Barbacoa and Cilantro Lime Rice

Wednesday:

Copycat Olive Garden Chicken & Gnocchi Soup, salad with Copycat Olive Garden Salad Dressing

Thursday:

Pepperoni Roll Ups from Taste of Home and leftovers

Friday:

Homemade pizza

Saturday:

Slow Cooker Chicken and Dumplings from Suburban Epicurean with salad/fruit

Sunday:

  1. I can’t plan menus in advance because I never know if I will feel good that day, but I am wanting to find some more slow cooker recipes. I am going to check out the ones you posted.

    1. The slow cooker is a lifesaver to me. Many of them are quick to assemble. (Check out my Favorite Recipes or Slow Cooker Recipes to Try Board on Pinterest). Mine tends to run hot so for chicken, I can put chicken in the slow cooker frozen for the cooking time and it comes out perfect. Having the chicken in the freezer helps just in case you don’t feel good, it won’t go bad in the fridge. Hope you are handling this cold weather ok. I had a bad RA day on Wednesday, guess my joints felt the pressure from the cold front coming in today. Thinking of you…

  2. I so need to be better about meal planning–our evenings always go so much more smoothly when I have a plan. Tonight is leftovers but I have no idea what will come next. And good for you that your superhubby helps. I get the same 5 answers from mine. Bah! 😉

  3. I am excited about meal planning in 2015 — with a newborn at home it’s going to be a challenge to get healthy fresh meals on the dinner table every night!
