Menu Plan Monday – October 13, 2014

I am joining Menu Plan Monday hosted by Org Junkie and What’s for Dinner? Menu Planning Linkup hosted by Jill Conyers and Mommy Run Fast this week to share what we’re eating this week. The only topic I like to chat about as much as books is food! My hubby watched the movie Food, Inc. a couple weeks ago and ever since then, we’ve REALLY been watching what kind of food we buy and eating at home even more. Menu planning is essential to make sure my hungry boys have some good food to eat.

Honestly, I did not get to everything on last week’s international menu plan and we switched the order around a little. We had an exciting week though, I got to see my favorite author Diane Chamberlain talk about her newest book, Superhubby went to see George Lopez perform at a comedy club and we had a birthday in the family.

This Week’s Menu Plan:

Sunday:

Biscuits with Sausage Gravy. This time I did not use the refrigerated biscuits from a can since they contain preservatives, anyone have a good homemade biscuit recipe?

Monday:

Breakfast for dinner:

Banana Crepes from Taste of Home. I normally double the batch so that I can freeze the leftover crepes to thaw and reheat another time (we love the sauce so we normally gobble that up no problem).

Hashbrown Casserole from Allrecipes. Tastes just like the Cracker Barrel version. I could eat the whole pan!

How to Cook the Perfect Bacon by Mommy of a Monster. My boys LOVE this bacon. I buy the Hormel Natural or Coleman Organic brands of bacon that has no nitrites and cook it using Mommy of a Monster’s Method for 35 minutes. Absolutely perfect!

Tuesday:

Cheesy-Butternut-Squash-Pasta-Bake-2A-Pretty-Life


Butternut Squash Pasta Bake from A Pretty Life in the Suburbs. I will use leftover bacon from Monday’s dinner as the topping. It probably won’t be as much as the recipe calls for, but that’s ok. I love butternut squash. Hopefully, this tutorial on how to peel and slice butternut squash will help because I struggled with it last time and Superhubby had to cut it for me.

Wednesday:

My own recipes – Chorizo con huevos tacos for breakfast and Baked Bean Chili with cornbread for dinner

Thursday:

Leftovers because it’s usually cleaning day

Friday:

Superhubby requested our homemade pizza. We ate pizza out yesterday and it was so greasy. Last time, I used Fleishmann’s pizza crust yeast to make our own pizza dough for the first time. We loved the taste of it. I loved that I didn’t have to wait hours for it to rise. Mix, knead and go. I still gotta get the hang of working with the dough, but practice makes perfect. Not sure what toppings we will put on it yet but it normally includes peppers from our little vegetable garden. What do you like on your pizza?

Saturday:

Slow Cooker Beef Stroganoff from Allrecipes. I made this once before and think I modified it a little since my Superhubby does not like cream cheese.

Sunday:
