Recipe Review: Slow Cooker Teriyaki Chicken
Today’s recipe review came from my first attempt at a Pinterest recipe from Lake Lure Cottage Kitchen’s blog. This recipe had rave reviews and looked simple to make so I gave it a whirl.
I was working from home today and at lunchtime I realized I didn’t have anything in mind for dinner. So I pulled out about 1.5 pounds of chicken thighs I had frozen. I halved the recipe as Penny had and cooked the frozen chicken in the slow cooker on low for 4 hours and high for the last 30 minutes just to make sure it was done and boy was it good!

This was a very simple recipe to make, 15 minutes of prep time with ingredients I already had in my freezer and pantry. No chopping involved, it doesn’t get any easier than this.

I served it with white rice and microwaved the pre-washed and trimmed green beans. Normally I make a sesame sauce which is slightly sweet for the green beans. However, since the teriyaki sauce was so delicious, I just drizzled

On a side note: Do you know what Lake Lure, NC is famous for? Well, I had one famous pop culture movie in mind but then found more info on Lake Lure here. Warning: I clicked on the lake lure ghost pictures inadvertently and it kind of freaked me out!

Thanks so much Deb. I am sorry your sister in law has RA. It’s not a commonly known disease but the family members are the ones who experience its difficulties firsthand. Sometimes I am glad I am the one who has to deal with RA and not someone I love. But I also can imagine that as a loved one, it’s difficult for them to watch me battle RA’s difficulties without being able to stop it. It destroys me when I hear my kids say that I can’t do something because of my hands or feet but I hope if anything they are learning empathy. I do try to keep a positive attitude and some days are harder than others. I appreciate you sharing my recipe review on social media, it is one of my favorites!
I love your review of this recipes. I find chicken thighs always produce the best chicken recipes, no doubt that holds true for this one.

Thanks Lisa for stopping by. I gotta agree with you that the thighs are more tender. I have also found in my slow cooker that if using chicken breast, frozen actually cooks better/more tender than fresh. I will be sure to stop by your blog, I have a serious addiction to collecting recipes!
