Whew, last week went so fast, I didn’t even get my weekly menu plan posted. I hurt my back somehow too so that had me not wanting to be on my feet as much, lots of quick meals in the weekly menu plan. I’m still a little out of sorts in my cooking/menu planning since Thanksgiving. Let’s hope I’m back on track this week.

This Week’s Menu Plan:

Monday:

Frozen Nana’s Enchiladas (Superhubby’s mom makes them and freezes them for us, yum!) and Arroz Con Gandules from Skinnytaste

 

Tuesday:

Gluten Free Peanut Butter and Banana Muffins from Eat Good 4 Life (they’re dairy free too)

Copycat Panera Bread Fuji Apple Salad from Creme de la Crumb 

Pulled Tandoori Chicken from A Big Man’s World with Channa Masala (Chickpea Curry) from Yummily Yours and rice

 

Wednesday:

Cinnamon rolls and fruit

Remicade day means a Slow cooker meal: Slow Cooker French Dip Sandwiches from This Silly Girl’s Life with french fries and salad

Thursday:

Leftovers because it’s my usual grocery shopping day 

 

Friday:

Homemade pizza

Saturday:

Cuban Pork Sandwiches from “Chef” Movie. Has anyone else seen Chef? We watched it a couple weekends ago.  When I asked what I should make for next week, this is all Superhubby wants. He even wants me to buy a panini press* just so I can make it more authentic than my usual version. I’m going to sneak in the waffle plates* that attach to the panini press/griddler and a food processor* while I’m at it since my cheap ones both broke on me! A cook is only as good as their tools and ingredients, am I right? 

Sunday:

Grilled Balsamic Chicken (a recipe I clipped from a magazine but don’t remember which one) and Creamy Dairy Free Mashed Potatoes from Watch Learn Eat.
