Has it been a week already? Last week’s menu plan included some tasty chocolate chocolate chip bundt cake, Rotisserie Chicken Cooked in a Bundt Pan which made for some tasty lunch salads with strawberries and I made homemade pesto for the first time. I made pizza for my brother in law and his family for the first time and my nephew said it was “the best pizza he’s ever had!” It was a tough week weather which wreaked havoc on my energy levels and Rheumatoid Arthritis but I did manage on getting everything cooked on my plan….small victory!
Devising a weekly menu plan is essential for me especially with all 3 kids in school, soccer and church classes. Why is it that their practices and games are all around dinner time? The kids’ activity schedule has forced me to change up how I do my weekly menu plan. With less time on the evenings and weekends, I need to make sure I have fresh food on hand and know what I plan to cook so we aren’t tempted to eat out. It also means quite a few evenings of slow cooker meals!

Homemade pizzas – cheese for the kids and supreme for Superhubby and I. I use the pizza dough recipe on the back of the Fleishman’s Pizza Yeast packet. How do you make your dough?
Copycat Cracker Barrel Pancakes from Mirlanda’s Kitchen with bacon and fruit. I made this last week and the boys LOVED it, “best pancakes ever” deserve another go around.
