Weekly Menu Plan – Oct. 2, 2015
Has it been a week already? Last week’s menu plan included some tasty chocolate chocolate chip bundt cake, Rotisserie Chicken Cooked in a Bundt Pan which made for some tasty lunch salads with strawberries and I made homemade pesto for the first time. I made pizza for my brother in law and his family for the first time and my nephew said it was “the best pizza he’s ever had!” It was a tough week weather which wreaked havoc on my energy levels and Rheumatoid Arthritis but I did manage on getting everything cooked on my plan….small victory!
Devising a weekly menu plan is essential for me especially with all 3 kids in school, soccer and church classes. Why is it that their practices and games are all around dinner time? The kids’ activity schedule has forced me to change up how I do my weekly menu plan. With less time on the evenings and weekends, I need to make sure I have fresh food on hand and know what I plan to cook so we aren’t tempted to eat out. It also means quite a few evenings of slow cooker meals!

This Week’s Menu Plan:
Friday:
Wing it, breakfast for dinner probably.
Saturday:
Homemade pizzas – cheese for the kids and supreme for Superhubby and I. I use the pizza dough recipe on the back of the Fleishman’s Pizza Yeast packet. How do you make your dough?
Salad
Sunday:
Copycat Cracker Barrel Pancakes from Mirlanda’s Kitchen with bacon and fruit. I made this last week and the boys LOVED it, “best pancakes ever” deserve another go around.
Carrabba’s Chicken Marsala from Carrabba’s blog, Cracker Barrel Mashed Potatoes from Copykat and Crusty Bread with Dipping herbs
Monday:
Beef Enchiladas with Black Refried Beans
Tuesday:
Slow Cooker Pizza Casserole from Taste of Home
Salad or fruit
Garlic toast
Wednesday:
Zesty Flounder Fillets over Lemon Rice from casserole cookbook
Thursday:

That looks great. I’ve never grilled pizza before and it’s been ages since I used my bread machine. How long does it take the machine to make the dough? Thinking I need to give it a good scrubbing and make some bread. Luckily the pizza yeast is fast rising so I just make it, top it and stick it in the oven. Easy for me and boys love it.

They really did love the pancakes, they kept asking for them. Just so you know, I could not find low fat buttermilk in any of our stores, maybe it is a Southern thing 🙂 So I used whole buttermilk and they still came out great. I appreciate the compliment on my blog name. Rheumatoid arthritis has forced me to appreciate the small victories. There are a lot of hurdles along the way so I take the good days and times when I can. I hope you will linkup some of your recipes with our Small Victories Sunday linkup.
