Weekly Menu Plan – Sept. 25, 2015
I may not have blogged my weekly menu plan in a few months but that does not mean I have not been doing it. Devising a weekly menu plan is essential for me especially with all 3 kids in school, soccer and church classes. Why is it that their practices and games are all around dinner time? The kids’ activity schedule has forced me to change up how I do my weekly menu plan. With less time on the evenings and weekends, I need to make sure I have fresh food on hand and know what I plan to cook so we aren’t tempted to eat out. It also means quite a few evenings of slow cooker meals!

This Week’s Menu Plan:
Friday:
Homemade pizzas – cheese for the kids and barbecued chicken pizza for us using leftover Rotisserie Roast Chicken that I cooked last week in a bundt pan.
Salad
Saturday:
Slow Cooker Buffalo Chicken from Skinnytaste, sandwich for Superhubby and a salad version for me.
Slow Cooker Barbecued Chicken sandwiches for kiddos since we have two slow cookers and they don’t care for buffalo chicken.
Tater tots
Chocolate Chocolate Chip Bundt Cake
Sunday:
Copycat Cracker Barrel Pancakes from Mirlanda’s Kitchen with bacon and fruit. I double the recipe so we can have quick breakfasts throughout the week.
Burgers Superhubby’s way (topped with avocado, bacon, and chipotle mayo) and Slow Cooker Baked Beans. Kids requested these beans, sweet, tangy and so delicious!
Monday:
We have an abundance of basil in our garden so time to try out some homemade pesto with this Basil Pesto Recipe from She Wears Many Hats. Smother some penne with this pesto and add some cooked chicken and broccoli and we have a meal the kids are sure to love.
Tuesday:
Kiddos requested banana bread so going to make our favorite Banana Pineapple Muffins. With extra fruit hidden in the muffins, these are wonderful for breakfast or a decadent dessert topped with ice cream and drizzled with caramel.
Slow Cooker Chicken Tortilla Soup from Cupcake Diaries with Paninis
Wednesday:
Bistec Encebollado (Steak with Carmelized Onions) from Food Network and Arroz Con Gandules (Rice with Pigeon Peas) from Skinnytaste

With a tight budget and a family of 6, I meal plan too. This past week the menu included Slow Cooker Chunky Steak Pie, Parmesan Ranch Chicken, Burrito’s, Homemade Pizza and Gravy Sausages

I tried Plan to Eat for the 30 days, and can see how it could be really useful. In the end, I decided I didn’t use it enough to justify paying for it. Though it’s recipe clipper is pretty cool.
