Happy New Year! Time for a delicious weekly menu plan to share with you some easy, family favorite recipes. Weekly menu planning ensures we save money on groceries and from spending a small fortune taking our family of 5 out to eat.

This Week’s Menu Plan:

Monday:

Mini Meatloaves, Green Beans and Potatoes from Parents Magazine. A simple, sheet pan recipe. My youngest called the meat “fantastic” and ate two servings…small victory! 

 

Tuesday:

 

Parmesan Crusted Cod with Garlicky Squash from Parents Magazine. I love these one sheet pan suppers, makes meal prep a cinch! 

 

Wednesday:

 

Hoppin John from Syracuse.com. I was supposed to make this traditional Southern dish on New Year’s Day but it didn’t quite work out that way. Better late than never, I need flexible menu plans.

Cornbread and salad

 

Thursday:

Salsa Verde Honey Lime Chicken Lime Enchiladas from Carlsbad Cravings. I’ll be making half with corn tortillas so I can eat them as I’m going gluten-free this month.

Spanish Rice from Just a Pinch. I use my mother-in-law’s recipe but this recipe sounds very close.

 

Friday:

Homemade pizza

 

Saturday:

Buttermilk Waffles and fruit from Cooking Classy

I’ll be using my new panini press* and waffle plates*, can’t wait to try them out! 

Baked Bean Chili with Cheesy Bacon Potato Rounds from This Simple Home and salad

 

Sunday:

Chicken Potpie Casserole from Taste of Home with salad

 

Monday:

Spinach and Ricotta Stuffed Shells from Fork Knife & Swoon

Cheesy Garlic Sticks from Six Sisters’ Stuff

  1. Your recipe for Chicken Pot Pie Casserole is very similar to mine- except mine is done in a skillet with whole wheat biscuits. I’m sure it’s delicious either way!
    I should plan my meals like this, but usually I just decide at the last minute what to make. I’m sure it makes things easier. 😉

    1. Yum, pot pie casserole is such a comfort food and my boys love biscuits. I wish they would eat whole wheat. Oh I’ve got to menu plan, makes it easier for me. I can’t wing it when they start hovering in the kitchen the moment they get home from school. Have a great day!

  3. Mmmm…they all sound yummy!

    I love sheet pan dinners, too – sooo easy & hardly any clean-up at all! I just throw a bunch of veggies and sausage onto a sheet pan and roast it – always delicious.

    We just had our Hoppin’ John Sunday night when we got back into town, so you’re not too late 🙂

    BTW, traditionally, enchiladas are always made with corn tortillas. The flour ones are used for burritos and quesadillas. So you are good! And thanks for reminding me – my family loves enchiladas & we haven’t had them in a while – have to plan that for an upcoming Sunday dinner when everyone is here!

    1. Thanks Sue. I ended up making the Hoppin John tonight because the fish wasn’t thawed and the boys all loved it. Inevitably I write out a menu plan and then immediately have to start switching them around. Oh well it was still good 🙂 I had a recipe for veggies and sausage sheet pan supper and I still haven’t made it but sounds good. I was surprised this recipe had flour tortillas too. My boys don’t like corn tortillas at all so I will make theirs burritos so they are more likely to eat it. Thanks for stopping by!

    1. Oh menu planning is a must for me with all these hungry boys to feed. If it was just me, I don’t think it’d be such a priority. The waffles are really good, one of my boys’ favorites! Enjoy!
